STEAMED LOBSTER

Steaming Instructions:Lobster Steamed

Choose a pot large enough to hold all the lobsters comfortably; do not crowd them. A 4- to 5-gallon (15- to-20 L) pot can handle 6 to 8 pounds (2.5- to 4- Kg) of lobster. Put 2 inches (5 cm) of seawater or salted water in the bottom of a large kettle. Set a steaming rack inside the pot and bring to a rolling boil over high heat. Add the live lobsters one at a time, cover the pot, and start timing.

Halfway through, lift the lid (careful—the steam is hot) and shift the lobsters around so they cook evenly.

Serve with melted butter or mayonnaise, freshly baked bread, lemon wedges and a green salad.

Schedule on minutes to steam the lobster according to its size:
1 pound(450g) steam 10 minutes
1-1/4 pounds(550g) steam 12 minutes
1-1/2 pounds(700g) steam 14 minutes 14
1-3/4 pounds(800g) steam 16 minutes
2 pounds(900g) steam 18 minutes
2-1/2 pounds(1100g) steam 22 minutes
3 pounds(1350g) steam 25-30 minutes
5 pounds(2250g) steam 40-45 minutes
